Fab 5 Friday 2/6/15 + Festive Nice Cream

Hello beautiful readers!

Happy Friday! This week has flown by! Sorry I didn’t do a Fab Friday last week–I was out of town at a Model United Nations Conference! Actually, this conference goes on my fab 5 list!

1. Model United Nations (Model UN)

Model UN is exactly what it sounds like. It’s a model of the United Nations. People represent a country or a person from a UN organization on a UN committee. In these committees, delegates try to solve real world problems by writing resolutions, which are then passed or failed. It gives the delegate the experience of what it would be like to be in the UN.  It’s fun and it gets one to think creatively on a global scale! In this conference, I represented a young teacher from South Africa in the International Education committee. I helped solve problems such as how to achieve worldwide gender equality in education! It took place at a university about an hour away from my house.

2. Snow Days

On Monday, my school had a snow day. In the past week, we’ve gotten about 2 feet of snowfall! The snow day was great because it gave me a chance to sleep in and make the banana nice cream shown below!

3. This nice cream sundae

Screen Shot 2015-02-02 at 7.28.58 PM This nice cream came about on Monday when I suddenly had a morning free because school was cancelled! I’d been craving peanut butter banana nice cream, so I made some. Logical, right? I wanted it to be festive, so I topped it with a strawberry heart to celebrate Valentine’s Day (it’s a week away!). The base is 3 frozen bananas, 2 tablespoons of peanut butter, and a few tablespoons of almond milk blended in a high-speed blender until smooth. The strawberry part is 4 frozen strawberries and a splash of almond milk blended together. The heart is outlined in cacao nibs for an extra crunch. It reminds me of a (super festive and fun) peanut butter and jelly sandwich! Yummy in my tummy!

4. Kabookie Week and School Spirit

This week at my school, we participated in something called “Kabookie Week”. It’s basically a spirit week at school where we dress up, celebrate the life and legacy of Kabookie, and are kinder than usual to each other. Kabookie was a guy in our community that was a model of kindness and friendliness. He was a true role model. Kabookie week aims to help students at school be kind and less judgmental, because you never know their full story and what they’re going through. I love Kabookie week at school. It makes the student body happier, and we listen to some cool speeches throughout the week. One of these such speeches was by…

5. Kinetic Affect

They’re two slam poets who create amazing poetry and are funny, too! I enjoyed their work. Check them out! Hopefully they will inspire you!  Here is a link to some of their poems that you can listen to! http://www.100poemsforhope.com/poems/

6. (A BONUS!) The Vegan Community on Pinterest

This is a great spot to look for vegan recipes, inspiration, and food porn! Check it out, and join the board if you like!

I hope you felt inspired by this post, and I hope the rest of your week is inspiring!

And remember, you are beautiful on the inside and the outside (cliché but so true!)!

xx Ellie
